ABOUT THE ROLE
Reporting to the Executive Chef of W Edinburgh, the Head Sushi Chef of SUSHISAMBA at W Edinburgh will have overall responsibility for directing the daily operation of the sushi production within SUSHISAMBA restaurant kitchen. This highly specialized role requires several years of previous experience working with a similar cuisine in a high-end, high-volume restaurant.
Joining the team means you will be instrumental to the success of the hotel and the restaurant’s operations and beyond. We are looking for someone who is organised, creative and passionate!
As Head Sushi Chef of SUSHISAMBA, key aspects of your role will include:
- Recruit and retain the best talent on the market
- Design and implement the restaurant kitchen’s policies and procedures
- Develop, design and implement new menus in collaboration with the Executive Chef and SUSHISAMBA team
- Develop teamwork throughout your teams as they grow
- Train, motivate and lead your team to produce their best work and recreate the menu to approved standards
- Promote a positive work environment
- Be a W brand ambassador, ensuring the brand’s voice is present in your interactions with guests and talent
- Maintain food hygiene and sanitation standards
- Ensure the highest levels of food quality are maintained
- Manage department budgets ensuring the maximization of profit while maintaining guest and employee satisfaction
- Work in collaboration with all heads of departments to ensure a successful hotel operation
Our ideal Head Sushi Chef of SUSHISAMBA is someone who has:
- Demonstrated decision-making and problem-solving skills
- Natural leadership skills
- Strong organization and multi-tasking skills
- Sophisticated communication skills
- The ability to train others with patience and confidence
- Previous experience working in sushi production or similar cuisine in high-end, high-volume restaurants
- At least three years of previous management experience
- A positive mindset
- A genuine passion for working in hospitality
